Operations Manager | Mick’s All American Pub

Briefly describe your job and responsibilities.

I oversee operations across all four of our units. This includes menu creation and execution, sourcing, staff hiring & training. I am involved with finances, forecasting and budget, growth initiatives and health & food safety.

What does a “typical” day at work look like for you?

I am usually on the computer early, working on whatever project is on the hopper at the moment. After that, I usually spend the day in one of the units, helping out as needed, working with staff on execution. My day usually wraps up reviewing any needs that occurred that day and then planning my next workday. There are often meetings mixed in there as well.

What was your first job in the hospitality industry?

Dishwasher/prep cook at Isaac’s Deli when I was 15. That quickly turned into a line cook gig.

When did you know this industry was right for you?

I was in college studying engineering and was having a miserable time. I ended up spending more time at my restaurant job cooking and bar backing than going to class. I left after my freshman year and got serious about hospitality as a profession.

Briefly describe your career path and how you got to where you are today.

Well, after I left college, I needed a job and returned to Isaac’s. I was quickly promoted to a manager and was given the opportunity to open three new locations in a new market. During that time, I took an online 18-month hospitality management program through ECornell. After that I went on to purchase my own restaurant and bar and ran that for six years.

As my kids were growing up, I made the decision to move on from ownership and get back onto operations. I worked for a chain, worked for two very successful independent restaurants, a brewery, and now Mick’s All American Pub, a single owner chain.

What is your favorite part of your job?

People—both serving guests and coaching, teaching & mentoring teammates.

What is the most challenging part of your job?

Bringing your A-game every day. Even when you just are not feeling it.

What advice would you give to students interested in your profession?

Hospitality is a fantastic profession. The opportunities are endless, and the sky is the limit, if you apply yourself. Never stop learning!

What achievement are you most proud of?

My family.

What do you like to do outside of work?

Everything food & beverage!!! Anything outdoors, backpacking, hunting, shooting sports. Sports, Penn State, Eagles & Phillies. Seeing new places and experiencing new cultures.

What is your favorite food to make or eat?

ALL of it, completely situational.

What’s at the top of your bucket list?

To keep doing cool things with cool people.
